台北醫學大學附設醫院營養室主任蘇秀悅表示,水溶性纖維豐富是黑木耳的一大特色,它不但能刺激腸道蠕動,幫助排便及預防便秘,還有降低膽固醇效果。

除了水溶性纖維豐富,黑木耳幾乎沒什麼熱量,稱得上是「空熱量」食物,而且,木耳沒有特別的味道,跟任何蔬菜都可以搭配,也可以跟肉類一道烹煮,對想減肥的人,是絕佳的瘦身食材。煮得軟爛的黑木耳,吸附水分後,還可以增加飽足感,達到控制食欲的目的。

降低血液黏稠度 抗凝血
