使用味精 可能與肥胖掛鉤

味精 (monosodium glutamate-MSG) 可以喚起美味,增進食慾,讓人多吃食物,因而增加變胖機率。一項最新研究,發表在8月份的《肥胖》(Obesity) 期刊。這項研究是由北卡羅萊納大學 (UNC) 華裔醫生Dr. Ka He主導。研究者追蹤華北與華南3個農村的752名中年男女,八成的人做菜時都添加味精。為避免混淆,他們不食用含有味精的商業加工食品,參加者根據味精使用量的多寡分為3組。「身體質量指數」(Body Mass Index-BMI)、吸菸與否、體力活動、和二十多種日常營養成份的攝取,都列在控制之下。收集的數據經過統計分析,他們發現,用味精最多的那一組人 (約佔三分之一),其體重過胖的可能性是不用味精者的三倍。體重過胖的定義為BMI 超出25。平均每天味精用量每增0.04盎司,BMI就升高0.61。

這也就是說,即使在熱量攝取和體力活動都保持不變,長期食用味精可能增加肥胖的機率。這又與過去動物試驗中,味精攝取量和體重過胖的數據一致。先前,美國食品藥物管理局 (FDA) 以及世界上其他的衛生機構,已經確定味精的無毒和安全性。但是我們必需正視肥胖問題,針對不斷上升的肥胖人口,提出解決方案。並且重新思考飲食方式,向精緻食物與速食說一聲不!

無論如何,從社會的層次來說,解決肥胖人口的問題太不簡單,需要衛生和教育政策的改革。從個人的層次來說,「減肥」並非一蹴可幾,而是需要自動自發的決心,和長期秉持的耐心。健康的飲食方式,輔以正確的生活和運動習慣,才能真正擺脫肥胖所造成的困擾。(作者為外科醫生)

The use of monosodium glutamate may be linked to obesity

MSG (monosodium glutamate-MSG) can arouse delicious, increase appetite, people eat more food, thus increasing the chance of fat. A recent study published in August in the "obese" (Obesity) Journal. The study by the University of North Carolina (UNC) Chinese doctor Dr. Ka He led. Researchers track in North China and South China 3 of the 752 rural middle-aged men and women, 80 per cent of the people when they are cooking to add MSG. In other words, even if the calorie intake and physical activity have remained unchanged, long-term consumption of monosodium glutamate may increase the risk of obesity. How does it relate to animal tests in the past, MSG intake and body weight of the prevalence of obesity in the same data. In the past, the U.S. Food and Drug Administration (FDA) as well as the rest of the world health body, has identified the MSG-free and security. But we need to face up to the obesity problem, in view of the rising obesity of the population, the proposed solutions. And rethinking the way restaurants, fast food to fine food and do not say!

In any case, from the community level, the solution to the problem of obesity is too simple, the need for health and education policy reforms. From the personal level, "weight loss" is not achieved overnight, but self-motivated determination to uphold and long-term patience.
