味精 (monosodium glutamate-MSG) 可以喚起美味,增進食慾,讓人多吃食物,因而增加變胖機率。一項最新研究,發表在8月份的《肥胖》(Obesity) 期刊。這項研究是由北卡羅萊納大學 (UNC) 華裔醫生Dr. Ka He主導。研究者追蹤華北與華南3個農村的752名中年男女,八成的人做菜時都添加味精。為避免混淆,他們不食用含有味精的商業加工食品,參加者根據味精使用量的多寡分為3組。「身體質量指數」(Body Mass Index-BMI)、吸菸與否、體力活動、和二十多種日常營養成份的攝取,都列在控制之下。收集的數據經過統計分析,他們發現,用味精最多的那一組人 (約佔三分之一),其體重過胖的可能性是不用味精者的三倍。體重過胖的定義為BMI 超出25。平均每天味精用量每增0.04盎司,BMI就升高0.61。
這也就是說,即使在熱量攝取和體力活動都保持不變,長期食用味精可能增加肥胖的機率。這又與過去動物試驗中,味精攝取量和體重過胖的數據一致。先前,美國食品藥物管理局 (FDA) 以及世界上其他的衛生機構,已經確定味精的無毒和安全性。但是我們必需正視肥胖問題,針對不斷上升的肥胖人口,提出解決方案。並且重新思考飲食方式,向精緻食物與速食說一聲不!
無論如何,從社會的層次來說,解決肥胖人口的問題太不簡單,需要衛生和教育政策的改革。從個人的層次來說,「減肥」並非一蹴可幾,而是需要自動自發的決心,和長期秉持的耐心。健康的飲食方式,輔以正確的生活和運動習慣,才能真正擺脫肥胖所造成的困擾。(作者為外科醫生)

The use of monosodium glutamate may be linked to obesity
MSG (monosodium glutamate-MSG) can arouse delicious, increase appetite, people eat more food, thus increasing the chance of fat. A recent study published in August in the "obese" (Obesity) Journal. In other words, even if the calorie intake and physical activity have remained unchanged, long-term consumption of monosodium glutamate may increase the risk of obesity.
