 營養師們建議,DASH飲食原則,每日七到九份蔬果。
 
●高血壓病患都知道要飲食控制,卻只有籠統概念,也不太清楚如何控制。美國研究團隊提出DASH(Dietary Approaches to Stop Hypertension) 飲食原則,是醫學界首度提供明確飲食比例,只要遵循此一原則,二周內血壓明顯下降,八周後,可以少吃一顆降血壓藥物!

台灣營養學會、中華民國血脂及動脈硬化學會日前首度舉辦DASH飲食菜單設計競賽,希望將DASH飲食原則,變成實際可行的餐點設計,未來將推出食譜,供民眾及營養師參考。

血脂及動脈硬化學會理事長陳肇文說,美國DASH團隊的研究發現,在不控制病患鹽量攝取、不改變體重的條件下,若能遵循DASH飲食原則,八周後,降血壓的效果,和使用一顆降血壓藥物治療效果雷同。如果再加上限鹽策略,效果可達二倍。

陳肇文說,吃一顆降血壓藥物,可降低病患8%的血壓,而吃DASH飲食八周後,可以降低10%的血壓,因此強烈推薦爬敻ㄞf患或是瀕臨高血壓的民眾,將DASH飲食納入改善血壓的調整生活方式。

至於這DASH飲食原則到底為何?台北榮總營養部主任章樂綺指出,DASH飲食計畫營養素原則,一日熱量攝取不超過1800卡,熱量來源中,脂質佔27%、飽和脂肪佔6%、蛋白質佔18%、醣佔55%,再配合少鈉(2000毫克)、少膽固醇(300毫克),攝取高量的鈣(750毫克)、鉀(4000毫克)、纖維(25克)。

台北的振興醫院營養師林孟瑜指出,DASH飲食設計並不容易。以鈉為例,一天2000毫克的鈉,代表只能吃5克的鹽,而天然食物中也有鈉,因此烹調時添加的鹽,一天只能放2.5克,如何在嚴格鹽分攝取限制中,又要有滋味,對營養師確是很高的挑戰。

DASH飲食概念還強調多攝取鈣、鎂、鉀,台灣基隆醫院營養室主任張皇瑜指出,鎂、鉀則可從堅果類攝取,一天至少一到二湯匙的芝麻、杏仁、核桃等堅果類。不過,張皇瑜警告,高鉀的餐點絕對不適合腎臟病患,腎臟病患應該先諮詢醫師與營養師。

有沒有簡明易懂的DASH飲食原則,營養師們建議,每日七到九份蔬果,吃點堅果類,二杯低脂牛奶,內臟、蛋黃千萬別碰,少鹽,多吃食物的天然滋味,就可以吃出健康。

陳肇文說,飲食控制最重要的是可近性要高,也就是要易做好吃。如果難吃或是太難烹調,病患根本不可能確實執行,美國設計的DASH餐點設計的很實際,所以接受度很高,因此才想廣召台灣的營養師、廚師設計DASH食譜,未來供民眾使用。(韋麗文)
